DYNASTY RESTAURANT WELCOMES EXECUTIVE SOUS CHEF HEW WAI SENG

Mr. Hew Wai Seng joined New World Saigon Hotel as executive sous chef of the Chinese kitchen with effective from 2 February 2015.
With more than 15 years of experience, a Malaysian national and Chinese origin, who specializes in Chinese cuisine such as modern Chinese, traditional Cantonese, Teochew and Hakka. He won the gold medal for individual appetizer at The World Golden Chef Competition in 2005 and the silver medal for individual appetizer at the Melbourne City Chef Competition in 2010.
His career started in 1996, he has crossed paths with many high-end restaurants, luxury hotels and international hotel chains. In 2008, his culinary journey took him to Australia, followed by Indonesia and then to Macau. He believes that the authentic Chinese cooking method is what modern days lacking and selecting, offering the freshest ingredients, cooking techniques to retain the flavors, scents and textures are the only way to create the finest menus.
“With his experience in the world of Asian cuisine, Chef Hew brings his energy, expertize and culinary knowledge to New World Saigon Hotel,” said Executive Chef Saju Rajappan.
